The short answer is I analyzed the Eden save-file data format, and wrote a program to make maps. The source code is public and you can compile it yourself. There's a link to instructions at the end of the blog article.
I like the big coasters, keep up the work! You might also want to explore "Olympic Metropolis Port Angkor", which has some pretty long coasters hidden inside the city, and there's a pretty good underground illusion section on one of them. They're like your blue-green coaster, where you spend a lot of time flying high in the air with no track.
Also, in most versions of "MEGA CITY TOKYO" there's a really long coaster inside a big building. The nice thing about it is you never get any loading screens because it keeps going around and around. But the camera angle gets messed up and they only use about 25-30 blocks of height, so a lot more could be done.
